day one is done

talk about a long day!


Up at 8 to be there at 9. One hour lunch break and finish at 5. I swear it’s like I work a 9-5!!!

Oh and then after rush stuff I ran to the bank then wal-mart then the apartment office (to bother them some MORE) then to the gym and was finally able to shower and eat. phew.

Now the deets:

This morning I tried out a version of HEAB’s overnight protein chia oats because I wasn’t sure how long I would be at the house and if we’d be allowed a lunch break so I wanted something that would hold me over.

I used 1/2 cup oats, 1/2 c water, 1 T chia seeds, raisins, cacao nibs, and 1/2 T cocoa powder. Then in the morning I added a little less than a scoop of sun warrior. It was delicious and filling, thanks HEAB!

Then you’ll never believe what I had for lunch. My first real fast food for months….the crepevine.

For those of you who are unfamiliar, the crepevine is a tallahassee eatery that makes all types of crepes from desserts to lunch to breakfast.

So what did I order?

They have a make your own option so I got every veggie they had except jalepenos plus salt n peppa.

True, this is probably the healthiest crepe they’ve ever made and also true that it probably wasn’t that bad for me, but I’m going to admit something to you guys, it took alot for me to finally come to terms with it after I ate it.

Besides the fact that crepes aren’t vegan, There’s just something about the fact that it was fast food and that I didn’t know the ingredients that irked me. I know it shouldn’t but it did and I’m trying to learn to come to terms with not eating perfect all the time.

So why did I eat it? Because not only was I hungry, but I only brought a larabar (which I knew wouldn’t be healthy to ONLY have that for lunch) and I didn’t drive so I was at the mercy of where my friends wanted to eat and I hate being the weirdo that won’t eat normal food or the nagger who never wants to eat where everyone else wants to. So I sucked it up and made the best of the situation.

The whole time in the back of my head I just kept remembering all of my fav bloggers who are some of my role models for healthy eating and kept remembering how they indulge too and aren’t always perfect with their eating but they are ok with it because they are also happy with themselves.

So instead of dwelling on it I simply ate how I normally would for the rest of the day and had the larabar after sorority schtuff and a bowl of quinoa and veggies for dinner

Apartment news: My walls were painted today!!! AND I’m getting new carpets….I’m so happyyyy!!!!!! I also found out that the reason my carpets are so messed up now is because the girl before had a dog (our apartment complex doesn’t allow animals) which makes all the scratch marks make a lot more sense. But there is also a red stain and a burn in the carpet from her hair straightener!!! urgh oh well i get new carpet πŸ™‚

Errands Galore

Oh mylanta!

Talk about a busy day! I’m back home in Orlando finally and stressed out of my mind! I have been running around doing errands all day because I only have 1 1/2 ish days left home. It’s going so fast! It really sounded like a lot longer when I planned it out but I have to make due with what I have because this was the only time I could go home 😦

The day started with a workout- 30 min. cardio + some back exercises. Then ran back home to get in some food.

We had planned to stop by the eye doctor but they were booked 😦 so we made an appointment for wednesday instead and jetted to COSTCO!! only one of my fav places ever. I’m a loser, i love a good bargain.

After loading up on toilet paper, paper towels, oats and coffee for the rest of my life lol we went to whole foods to get some food since there was absolutely NOTHING to eat at the house. It was actually kind of strange. I had a hard time understanding what my parents eat when their hungry and then I remembered…”oh there’s actually kind of a lot when you consider that they eat like normal people” lol. My brain obviously no longer works that way.

After that, it was bed bath and beyond, then kohl’s, then publix, then BACK to bed bath and beyond, then target (it was obvious that we were starting to get a little loopy from all shopping and could no longer make up our minds).

Somewhere in that we managed to eat and I even made my step dad’s fav vegan coffee cake again!

He’s been missing it alot since I’m the only person that can make it according to him lol.

And to end the day I enjoyed one of my new favs oat bran VOO!!!

It’s more pudding-y because the oat bran is so small and mealy. It’s prob my second fav after rolled oats. What can I say, I like to chew my food!!

Oh and in case you were wondering this is where I slept the night before I drove home and the conditions I’ll be sleeping in again for 2 more days after I return to tally thursday

yes that’s my new room and yes, that is a sheetless mattress 😦 it made me feel so homeless. not fun. Can’t wait to move in my stuff and actually have a HOME again!

Homemade Protein Bars

As you may or may not remember, my beloved sun warrior stash has been depleted.

Although I bought some online, I had it sent to my house instead of my apartment and so it sits at my parents home…all alone…in the dark pantry…unused *tear*

So to supplement my protein needs for the time being, I went out and purchased the cheapest vegan/non-soy proteinΒ  money could buy.

well I guess I got what my money paid for because this stuff tastes like poop 😦

Now let’s add the fact that the magic bullet is broken and I’m too lazy to clean the blender so smoothies are no longer happening. So what’s a girl to do when she needs her protein fix?

make my own protein bars that’s what!!!

I made two different types. The first one (closest) I made with nuts but since I feel like I am eating too many nuts I wanted to make a second version without nuts so I added puffed millet cereal instead.

I also not really a fan of this cereal. I know, I know, it broke my heart too because I love my millet bread. Oh well, you win some you lose some.

Now before I get to the recipes, I’m going to warn you that the nut free recipe is still a work in progress but I supppppose I will share the recipe with you anyways πŸ™‚

Homemade Protein Bar (with nuts)

1/2-2/3 cup raw almonds

4 dates

3 T protein powder

1 T cacao nibs

dash of cinnamon

water as needed

put protein powder, dates, cinnamon and nuts in food processor and process. nuts and dates are ground add 1 tsp of water then process. continue to do this until dough will stay together in a ball (DON”T ADD TOO MUCH WATER). at the very end add the cacao nibs and process just to mix it throughout. then empty onto foil and form into bar shape. Cut into desired size and enjoy your chemical/preservative free and cheap homemade bar!

Homemade Nut-Free Protein Bar

6 dates

3 T protein powder

1/2 cup puffed millet cereal

1 T cacao nibs

dash of cinnamon

process the dates, cinnamon, and protein powder and when well combined begin gradually adding water as needed just as before. after the dough turns into a consistency where it can easily form a ball, add the cacao nibs and process just to mix. empty onto foil with millet cereal already laid out on foil and begin incorporating the cereal into the dough by hand. after fully incorporated, form into bar shape and cut into desired size.

* just as a reference I ended up with 2 bars

oops! I had actually eaten half of the nut bar but I bet you thought it was whole the entire time ha!

VOO Variations

I’ve been experimenting with my beloved VOO by using different grains!

I had a huge bag of rolled oats that I brought to college from costco and I finally used it up so while I was at the grocery store I decided I wanted to try some less processed oats and grains and see how they matched up to my precious *gollum voice*.

First up: Buckwheat Groats

I cooked these then added the usual almond milk, dark cocoa powder, chia seeds, cacao nibs, and raisins then let them sit in the fridge and marinate.

The groats are very soft but they retain their shape so you get to taste the texture of each of the little kernels. It kind of has an odd taste though that I don’t really know how to describe…you’ll just have to try it for yourself. But for me, it was a little off putting.

on a positive note, I must say the groats layer very well. I mean look at those perfect layers!

Second Version: Steel Cut Oats

I don’t know if I just didn’t cook it long enough but the texture was a lot chewier than I thought it would be. Whenever I see steel cut oats on other blogs I guess they just look creamier so I was expecting a porridge type thing which is not what I made lol

Third Try: Breakfast Sundae

Sorry Katie!

I really did try but I had the worst day ever!!! I broke my roommates magic bullet while I was trying to make your breakfast sundae…coincidence? It was so gross, I guess I’m a little too rough with the thing so it started melting plastic into my precious nanners! 😦 not happy. So anyways…this was what I could come up with. Not very pretty but still yummy and isn’t that all that matters? I even used your voluminous oats trick on my steel cut oats πŸ˜‰ Much better texture and a lot less chewy. Just do me a favor and pretend that the bananas are whipped for the whipped cream and the peanut butter date blob is the sauce and the cacao nibs are the sprinkles. Gotta love the imagination!

*Note: Cooking the oats gives it more of a creamy/ pasty texture I’ve found. This isn’t necessarily bad but I think I just prefer the chew of the uncooked rolled oats

Verdict= although heavens knows I love experimenting and whipping up new concoctions to find new and awesome treats, for my beloved VOO……it seems uncooked rolled oats are the queen bee. Nothing compares to the original my friends, at least for now.

But believe me, this is not the end of my quest to find new delicious obsessions and if I find something that beats the ultimate VOO, you will be the first ones to know πŸ˜‰

Quinoa Granola Cereal

I’ve officially made it my mission to finish the foods in my pantry and fridge before I stock up on more things. I know I’m always going on about cleaning out my fridge but I think it’s because for the first time in my life I’m buying my groceries and no one else is helping me eat the things I buy so I feel like I’m constantly scarfing food down so nothing goes bad! I guess that’s not too bad of a situation to find myself in πŸ™‚

But now I have even more of an incentive because in 2 weeks i will once again be moving! AHHHHH

Geez, I really can’t wait for the school year to start so I will finally have a permanent residency.

So anyhooo, how am I going about eating everything that I have?

Enter Quinoa Granola Cereal!

(inspired by the edible perspective’s Quinoa Granola)

1 cup quinoa

1 cup water

1/2 cup almond milk

1 T cinnamon

3 T flax seeds

2.5 T raw agave

1/2 cup almonds (chopped/slivered would be even better)

1/2 cup raisins

– preheat oven to 350. Bring water to a boil then add quinoa and lower to a simmer. After about half the water evaporates add the almond milk. After cooking add the rest of the ingredients and mix. Grease a baking sheet and bake for 45 minutes, stirring the granola about every 15 minutes.

*make sure you don’t over bake because the quinoa becomes pretty hard*

This granola creates a crunchy, lightly sweetened and nutty granola. The only thing it’s missing is that it doesn’t create clusters but it’s still delish! I ate mine with a little almond milk for breakfast

btw has anyone seen strange sex on TLC? I was recently flipping through the channels and stumbled on this on and let me tell you, strange is definitely an understatement.

If you’ve seen it, what do you think about it? Let’s just say I was laughing and amazed the entire time lol

Almond Date Spread

I finished my raw almond butter and I’m having withdrawals 😦

and in an attempt to save some money, I’m refusing to buy a new jar until I move in a couple weeks.

So what’s a girl to do?

Why not try making my own?!?

ya…well that failed miserably. After reading a few how-to’s on making AB after I created a hard almond dough ball I learned that all I needed was so process a little longer and it would have formed the butta. However for prides sake I am going to blame my almonds and the fact that I soaked them and added water as the reason I don’t have drippy delicious AB in my fridge.

So I have a dough ball in my fridge… now what?

Well it wasn’t particularly tasty so I decided to try to turn it into a bar by adding some dates. Back in the food process it went and what came out was oh so good.

The dates made it a lot more spreadable, so I give you

Almond Date Spread

1.5 cups almonds (soaked for an hour)

6-10 dates (depending on how sweet you want it)

dash of cinnamon

– I processed the almonds until they formed into a dough ball, then remove from processor. Process dates until they are paste. Combine both in processor with cinnamon and your done!

And guess what I’m storing it in…

yup, old salsa jar. Man that salsa is good πŸ™‚
