back and still homeless

It’s true, sadly I’m back in tally sleeping on a sheetless mattress again because I’m not technically moved in yet 😦

In fact, I’ve gotten so desperate that when I went to work out I also showered at the gym. I know this is a normal thing for many people but I think it makes it ultra sad that I showered there out of necessity and not convenience. Oh well only 2 more days!!

I can’t wait to decorate my room. Seriously. You guys have no idea how excited I am to post the before and after pics!! Although I will warn you, don’t expect tooooo much but I’m just super excited to FINALLY have my own place.

So back to today’s activities:

left home around 12:30 and drove 4 long hours to tally…yuck. Then proceed to the gym (as mentioned before) to workout legs that were stiff from driving. After a quick shower I was hungrrryyy and really wanted healthy food that I didn’t have to make so I rushed over to new leaf hoping for the best but it was already 8 so I wasn’t sure if their hot bar would still be open… was!!! success.

this was my first hot bar expirience guys and I must say, it was heaven.

ate the whole thing 🙂

and now some random eats from home:

I got in as many juices as possible while I was home since I don’t have a juicer 😦 Momma always makes carrot +apple + beet + ginger

I told her to go heavy on the ginger for ultra juice powers! She didn’t disappoint lol it was strong!

I also ate this twice

I don’t think I would at all mind eating this everyday for the rest of my life. Quinoa + Eden’s organic pasta sauce +avocado. Simple, classic and delish.

I also tried my first spaghetti squash! I didn’t feel like a savory meal at the time though so I turned it into dessert.

It was pretty yummy but I think it would have been even better with some apples instead and maybe some stevia or brown sugar.But I am officially a fan of spaghetti squash. It really turns into spaghetti noodles, who would have thought!

VOO Variations

I’ve been experimenting with my beloved VOO by using different grains!

I had a huge bag of rolled oats that I brought to college from costco and I finally used it up so while I was at the grocery store I decided I wanted to try some less processed oats and grains and see how they matched up to my precious *gollum voice*.

First up: Buckwheat Groats

Still in the Tupperware=not so pretty, Sowwwyy

I cooked these then added the usual almond milk, dark cocoa powder, chia seeds, cacao nibs, and raisins then let them sit in the fridge and marinate.

The groats are very soft but they retain their shape so you get to taste the texture of each of the little kernels. It kind of has an odd taste though that I don’t really know how to describe…you’ll just have to try it for yourself. But for me, it was a little off putting.

on a positive note, I must say the groats layer very well. I mean look at those perfect layers!

Second Version: Steel Cut Oats

I don’t know if I just didn’t cook it long enough but the texture was a lot chewier than I thought it would be. Whenever I see steel cut oats on other blogs I guess they just look creamier so I was expecting a porridge type thing which is not what I made lol

Third Try: Breakfast Sundae

Sorry Katie!

I really did try but I had the worst day ever!!! I broke my roommates magic bullet while I was trying to make your breakfast sundae…coincidence? It was so gross, I guess I’m a little too rough with the thing so it started melting plastic into my precious nanners! 😦 not happy. So anyways…this was what I could come up with. Not very pretty but still yummy and isn’t that all that matters? I even used your voluminous oats trick on my steel cut oats 😉 Much better texture and a lot less chewy. Just do me a favor and pretend that the bananas are whipped for the whipped cream and the peanut butter date blob is the sauce and the cacao nibs are the sprinkles. Gotta love the imagination!

*Note: Cooking the oats gives it more of a creamy/ pasty texture I’ve found. This isn’t necessarily bad but I think I just prefer the chew of the uncooked rolled oats

Verdict= although heavens knows I love experimenting and whipping up new concoctions to find new and awesome treats, for my beloved VOO……it seems uncooked rolled oats are the queen bee. Nothing compares to the original my friends, at least for now.

But believe me, this is not the end of my quest to find new delicious obsessions and if I find something that beats the ultimate VOO, you will be the first ones to know 😉

Electrolux #splits: Banana Split!

Chocolate Mascarpone Brownies

Hey guys!

Arms. are. killing. right. now………….hard. to. type. jk lol but I did have a pretty awesome chest workout today. I think it’s the combo of today’s workout on top of yesterday’s that’s making me really feel it.

Today’s workout:

warm-up was 10 min. on the treadmill at 10.0 incline/3.5 mph

chest + abs

Random eats:

I finally made the perfect wrap!!! I was so excited because everytime I go to a health food store for a wrap they always make it so perfect. Who knew making a wrap was difficult…not me but this one was finally pretty enough to photograph (and delicious too!)

Later in the night bebler requested a special dessert so off to club pub for me! I found a recipe for chocolate mascarpone brownies so I lazied it up and got these ingredients instead

Refocusing + A Full Day’s Eats

So I’m not going to lie, I’ve been off the wagon lately. It’s time to refocus on my eating and fitness.

On the fourth I only had 2 meals…bad I know but alcohol suppresses my appetite and I was out of the house all day. I wasn’t even that hungry for my brussel sprouts when I woke up from passing out my nap but I forced myself to eat because I knew I needed substantial food.

To refocus I’ve decided to schedule out my eating throughout the day. Because of classes and working out, my schedule has resulted in 5 meals a day at 8:45, 12:00, 3:30, 6:30, and 10:00. I’ve also increased my nut intake for protein and it’s not treating my tummy very well so I think I’m going to actually limit my nut intake and instead increase my volumes of food and maybe get a probiotic so I can fix my digestion. Any suggestions for a good probiotic? I’m kind of clueless in this arena 😦

Today’s workout:

cardiostart at 6.0mph on treadmill then increase .1mph every minute for 15 min.

it was about a 45 min. workout and then I did 20 min. of yoga later. This was EXACTLY what I needed after sitting on my butt all weekend, not eating right and drinking copious amounts lol

I don’t know about you guys but I love routines. I like knowing exactly what I’m doing and and having my day planned out. Call me crazy but I just love how productive it makes me feel 🙂

Speaking of productive I also cleaned my room and bathroom and went grocery shopping! Go me!!!

Today’s eats:

In order to fix my stomach I decided to stay away from the millet bread and nuts today. Sometimes I feel like my body just needs to be cleansed, even though there was some of this this morning

Hey I needed an energy boost! (my energy has also been pretty low lately but I think that is just the lack of morning workouts) I’m also going to try to start my day with fruit so hopefully the sugar will get me going. So breakfast was a nectarine and a tall black coffee with cinnamon.

After my workout I had a protein shake with blueberries+ strawberries+ papaya. It was delicious even though we ran out of greens 😦

My stock was replenished after a trip to club pub so I mixed up a quick but delicious salad

I had never had radishes before. Verdict= ehhh, nothing special. Dressing was spicy brown mustard + apple cider vinegar + reduced fat veganaise.

Dinner was another salad and EXACTLY what I’ve been craving.

Mmmmm Avocadoey goodness! That’s half an avocado, tomato, spinach, red onion, and salsa

And dessert….

the lazy girl’s VOO (and yes I make my desserts so big they are actually a meal- no little treats here lol). The magic bullet stuff was dirty and I didn’t want to dirty the processor so it was chunks of frozen banana + better n’ butter + VOO for me! I also ate some of it before I realized I forgot to photograph..sorry for the ugly pic. It was still good but nothing beats banana soft serve.

I was so happy with my meals today. I was satisfied and never overly stuffed and my stomach didn’t hurt once! So if you were ever curious as to what I eat (on the perfect day)… there you have it! Until tomorrow 🙂

btw my big has the 4th of july pics but she left her camera at a friends…sorry but it’s going to be alil while longer

Random kitchen concoctions

So guess who’s been a little bored in the kitchen lately??

I actually thought about this before I went to bed one night and finally got around to making it the other day

Easy homemade jelly!!!!

3 frozen strawberries

1/4 c frozen blueberries

1/2 T chia seeds

2 dates


I tried it the next morning on my fav millet bread but for some reason the bread was too overpowering/jelly wasn’t artifically sweet enough to handle it so instead I ate it straight up. Umm say hello to my fav new dessert!!! I put the jelly on top of some cut up frozen banana and it was delish but it could seriously go on anything..or by itself 🙂

then it was onto the lowfat hummus

Zucchini Hummus

Zucchini + baby carrots+ cilantro + lemon juice + garlic + liquid aminos + tahini + cumin+ salt n peppa

Sorry for no measurments… I just kind of threw stuff into the food processor until it tasted right.

And guess what I found at New Leaf (tally’s lame excuse for a whole foods)??

Healthy Nesquik

I hope learning a little bit more about my diet ( I made a new page for it) helped make things clearer and even helped you learn something! I urge you to keep researching and learning more about nutrition and what works for you. The only way I was finally able to find the diet that truly works for me was through trial and error.

Now onto some of the days eats:

I ended up laying out instead of working out in the morning so I pushed it back to right before dinner. Before I left I was a little hungry/light headed so I made a quick chia pudding to keep me going

I was in a rush so it didn’t sit long and was still a little runny but it did the trick.

Chocolate Chia Pudding

1 T Chia Seeds

1/4-1/2 c almond milk (or desired consitency)

1 tsp mesquite

1 tsp dark cocoa powder (not raw but sooo good)

a little stevia to sweeten

stir it all together and let sit, the longer the thicker. This tasted like chocolate milk. I’m sure it you omitted the chia seeds it WOULD be chocolate milk. Healthy nesquik!

On a side note: Someone asked what mesquite tasted like. I guess the only way I can describe it is it’s kind of earthy, sweet and nutty smelling (think of a sweet smelling tree). Or what about this picture- a nut and cinnamon and a little bit of sugar got together and had a love baby? lol I don’t know but it is definitely an awesome addition to your spice and powder collection, especially when you’re not technically in the mood for chocolate but still want something sweet.

Now back to the workout. It was horrible. I hate waiting to workout because when I don’t workout in the morning I find I don’t have as much energy during the day and therefore no motivation to go later. But I was VERY bad yesterday and carbo loaded to the max so I knew I needed to go.

As soon as I got on the treadmill I realized my ipod was dead. I also recently finished reading my newest magazine so I had nothing to keep me entertained :(. Not only that but I had to pee throughout my entire run! Besides all of that though I pushed myself pretty hard. I did 15 min. starting at 6 mph. Each min. I increased my speed by .1 mph. At 14 min. I finished hard and increased by .2 to end at 7.5 mph. I know I could have run more or done something else but i had to PEE! So I gave up and did abs. To top it all off at the end of the workout it was raining and thundering outside 😦 not a good workout day at all.

For dinner I was craving sweet potato again, even though it ALWAYS seems to bloat me, and I made a salad to go with it

The dressing was a little reduced fat veganaise and spicy brown mustard watered down. I only ended up eating 3 of the sweet potato slices and got some mary’s crackers instead

have you ever had these?

I finally gave up resisting them after seeing them on EVERY blog and bought the expensive box of crackers. Big mistake. I got the original kind and it tasted verryyyy familiar. I still don’t know what it is, but I’ve eaten something that tastes just like them before. Anyways, the taste is good but nothing special. They also don’t fill me up at all so I have practically eaten the entire box in two days- Not something to be proud of. Basically they are not worth the money in my opinion and also not something I want to be filling myself up on (I prefer to get my carbs from fruits and vegetables)

So basically I have not been too happy on the food front or workout front lately but I am trying to get back to normal and get more veggies back into my life.
