12 Aug

…that pretty much describes how busy I am.

I’m def starting to get worn out 😦 but the week is almost over and next week all our hard work with pre-rush will be worth it when the new babies come running through the front door!!!

Some random eats:

I’ve been making a lot of quick and delicious protein cakes with REAL legit drippy store bought raw almond butta instead of my chunky not-so-spreadable version that didn’t taste as good 😦 and guess what? It was only $10! Publix sells the same size jar for $17, holla! Eaten with frozen banana of course

there have also been some yummy sangwiches

with some reduced fat veganiase and tomato paste as condiments!

I’ve been wanting to try tomato paste as a replacement ketchup ever since I saw angela start using it

on millet bread (my fav). Yummmmmm

well that’s all I’ve got for now but I’m supppeeerrrr excited that I just found out I’m seeing eat, pray, love this weekend! I’ll tell you all how it is don’t worry 😉 have a lovely rest of the week!

day one is done

9 Aug

talk about a long day!

Overview:

Up at 8 to be there at 9. One hour lunch break and finish at 5. I swear it’s like I work a 9-5!!!

Oh and then after rush stuff I ran to the bank then wal-mart then the apartment office (to bother them some MORE) then to the gym and was finally able to shower and eat. phew.

Now the deets:

This morning I tried out a version of HEAB’s overnight protein chia oats because I wasn’t sure how long I would be at the house and if we’d be allowed a lunch break so I wanted something that would hold me over.

I used 1/2 cup oats, 1/2 c water, 1 T chia seeds, raisins, cacao nibs, and 1/2 T cocoa powder. Then in the morning I added a little less than a scoop of sun warrior. It was delicious and filling, thanks HEAB!

Then you’ll never believe what I had for lunch. My first real fast food for months….the crepevine.

For those of you who are unfamiliar, the crepevine is a tallahassee eatery that makes all types of crepes from desserts to lunch to breakfast.

Exhibit A:

Exhibit B:

So what did I order?

They have a make your own option so I got every veggie they had except jalepenos plus salt n peppa.

True, this is probably the healthiest crepe they’ve ever made and also true that it probably wasn’t that bad for me, but I’m going to admit something to you guys, it took alot for me to finally come to terms with it after I ate it.

Besides the fact that crepes aren’t vegan, There’s just something about the fact that it was fast food and that I didn’t know the ingredients that irked me. I know it shouldn’t but it did and I’m trying to learn to come to terms with not eating perfect all the time.

So why did I eat it? Because not only was I hungry, but I only brought a larabar (which I knew wouldn’t be healthy to ONLY have that for lunch) and I didn’t drive so I was at the mercy of where my friends wanted to eat and I hate being the weirdo that won’t eat normal food or the nagger who never wants to eat where everyone else wants to. So I sucked it up and made the best of the situation.

The whole time in the back of my head I just kept remembering all of my fav bloggers who are some of my role models for healthy eating and kept remembering how they indulge too and aren’t always perfect with their eating but they are ok with it because they are also happy with themselves.

So instead of dwelling on it I simply ate how I normally would for the rest of the day and had the larabar after sorority schtuff and a bowl of quinoa and veggies for dinner

all mashed up

that’s the good stuff

Apartment news: My walls were painted today!!! AND I’m getting new carpets….I’m so happyyyy!!!!!! I also found out that the reason my carpets are so messed up now is because the girl before had a dog (our apartment complex doesn’t allow animals) which makes all the scratch marks make a lot more sense. But there is also a red stain and a burn in the carpet from her hair straightener!!! urgh oh well i get new carpet 🙂

and here is my partial workout schedule from july as promised! sorry it was in excel and i didn’t really know how to insert it in here

cauliflower rice + pasta sauce

20 Jul

Hey guys!

So I know you are probably wondering what has happened with my fitness plan since I haven’t been talking about it. Don’t worry! All is well on the home front. I’ve been keeping up with the strength training and eating 5-6 meals a day.

I’m still really liking eating smaller meals often (mostly because I’m always bored and it gives me something to look forward too :)) but I have to say, I don’t like how full/bloated I’m feeling sometimes. I’m still trying to figure that one out.

The workouts are also going really well. I started logging my workouts on a calendar so I can keep track and make sure I don’t forget/slip up on my strength training. I really haven’t been doing any cardio at all though 😦 I’ve found that I’m really missing my cardio. It gives me so much energy and without the cardio I’m a lot more lethargic than I would like. But besides that minor downside I’m loving how strong I’m feeling and how I go to the gym “with purpose” now lol I know my exercises and what needs to get done and I do it! I feel like one of the guys 🙂 At the end of the month I’ll try and post my calendar for you or somehow tell you how my schedule played out.

Random eats:

cinnamon protein cake with mango

post workout protein! I had a ripe mango that I cut up the night before and instead of pulverizing it into a mango protein shake I decided to have cake! Can you blame me?

afternoon snack- cucumber, red onion, tomato, apple cider vinegar, raw agave, salt n’ peppa

(unseen- a massive lettuce leaf and a couple handfuls of raisins)

refreshing and yummy 🙂

and then there was dinner

Not going to lie, I have actually had this 2 or 3 days in a row. It’s gooooood. Plus I’m pretty much just obsessed with this sauce!

Cauliflower Rice with Pasta Sauce

1/3 head of cauliflower (probably even better steamed but I had it raw baby)

1/2 cup of Eden Organic Pizza/Pasta sauce

1 T nutritional yeast

1/4 tomato (chopped)

1/4 red pepper (chopped)

salt n’ peppa

I was trying to get my raw veggies in so I just warmed up the sauce and left the veggies uncooked. But I know this would prob be wayyyy better with some steamed cauliflower and sauteed tomato and red pepper with garlic. Oh gosh now I’m salivating…

And dessert?

You’ll just have to wait for my next post, but I’ll give you a hint- I’ve been doing some fun variations on my fav

Test 1=Over

10 Jul

The test is over!

I really am the worst person to be around when I’m stressed out. Poor Carson has to put up with me all by himself too…sorry babe!

But alas the grades are posted already and I didn’t do too bad! One less thing to worry about but I’m still giving a speech on Monday that I haven’t even written yet and I’m afraid of public speaking…yikes! Wish me luck on that one too lol

Friday’s workout:

warm-up= 10 min. on stairmaster at level 6-7?

shoulders

(shoulder workout from here)

I feel like I’m already noticing a difference in my muscle definition! Even though I was a bit hesitant about this whole “giving up” my cardio thing for strength training, I’m actually really loving how much stronger I already feel. I also haven’t given up cardio completely, I’m just doing it less strenuously and I feel like I have found a happy medium 🙂

Nothing new on the weight front either. I’m still struggling to maintain (I may have even dropped a little more) but hopefully by replenishing my food supply that’ll figure itself out lol

What else did I do yesterday?

I made REAL hummus 🙂 and it’s good

Garlic Hummus

1 can of garbanzo beans

4 cloves of garlic

1 tsp cumin

1 1/2 T liquid aminos

1/4 c tahini

2 T olive oil (I didn’t want to add too much oil so to make it thinner I added a little water)

handful of parsley

juice of half a lemon

salt n’ peppa

– then process your little heart out and smear that sucker on anything and everything

then later it was time to finally relax after studying so hard! Off to the club for a girl’s night!!!

And of course I woke up with a hankering for something cold and refreshing….too bad the roommates were asleep so I didn’t want to reek havoc and turn on the blender for banana soft serve. Unfortunately I’m considerate like that.

So instead I settled for a blueberry sludgy.

Not the most glamorous but I’m loving frozen blueberries right now.

In the mug=frozen bluerries, banana, and almond milk

I especially love how the blueberries freeze the almond milk at the bottom and make it into an icy sludge (hence the name)

Well I’m off to lounge around and maybe work on that speech. ta ta!

Chocolate Mascarpone Brownies

7 Jul

Hey guys!

Arms. are. killing. right. now………….hard. to. type. jk lol but I did have a pretty awesome chest workout today. I think it’s the combo of today’s workout on top of yesterday’s that’s making me really feel it.

Today’s workout:

warm-up was 10 min. on the treadmill at 10.0 incline/3.5 mph

chest + abs

(exercises from here)

Random eats:

I finally made the perfect wrap!!! I was so excited because everytime I go to a health food store for a wrap they always make it so perfect. Who knew making a wrap was difficult…not me but this one was finally pretty enough to photograph (and delicious too!)

before-

after-

not even a sprout fell out of this baby!

Later in the night bebler requested a special dessert so off to club pub for me! I found a recipe for chocolate mascarpone brownies so I lazied it up and got these ingredients instead

yup I’m lazy.

after baking…

and all jazzed up with it’s chocolate ganache

oh ya baby. Apparently It tastes like chocolate lava cake 🙂

And don’t worry….I didn’t forget about myself

dark chocolate protein cake with frozen bananas and almond butta on top

I don’t know about you but I call this success 🙂

Refocusing + A Full Day’s Eats

6 Jul

So I’m not going to lie, I’ve been off the wagon lately. It’s time to refocus on my eating and fitness.

On the fourth I only had 2 meals…bad I know but alcohol suppresses my appetite and I was out of the house all day. I wasn’t even that hungry for my brussel sprouts when I woke up from passing out my nap but I forced myself to eat because I knew I needed substantial food.

To refocus I’ve decided to schedule out my eating throughout the day. Because of classes and working out, my schedule has resulted in 5 meals a day at 8:45, 12:00, 3:30, 6:30, and 10:00. I’ve also increased my nut intake for protein and it’s not treating my tummy very well so I think I’m going to actually limit my nut intake and instead increase my volumes of food and maybe get a probiotic so I can fix my digestion. Any suggestions for a good probiotic? I’m kind of clueless in this arena 😦

Today’s workout:

cardiostart at 6.0mph on treadmill then increase .1mph every minute for 15 min.

strength-

(arms workout from here)

it was about a 45 min. workout and then I did 20 min. of yoga later. This was EXACTLY what I needed after sitting on my butt all weekend, not eating right and drinking copious amounts lol

I don’t know about you guys but I love routines. I like knowing exactly what I’m doing and and having my day planned out. Call me crazy but I just love how productive it makes me feel 🙂

Speaking of productive I also cleaned my room and bathroom and went grocery shopping! Go me!!!

Today’s eats:

In order to fix my stomach I decided to stay away from the millet bread and nuts today. Sometimes I feel like my body just needs to be cleansed, even though there was some of this this morning

Hey I needed an energy boost! (my energy has also been pretty low lately but I think that is just the lack of morning workouts) I’m also going to try to start my day with fruit so hopefully the sugar will get me going. So breakfast was a nectarine and a tall black coffee with cinnamon.

After my workout I had a protein shake with blueberries+ strawberries+ papaya. It was delicious even though we ran out of greens 😦

My stock was replenished after a trip to club pub so I mixed up a quick but delicious salad

I had never had radishes before. Verdict= ehhh, nothing special. Dressing was spicy brown mustard + apple cider vinegar + reduced fat veganaise.

Dinner was another salad and EXACTLY what I’ve been craving.

Mmmmm Avocadoey goodness! That’s half an avocado, tomato, spinach, red onion, and salsa

And dessert….

the lazy girl’s VOO (and yes I make my desserts so big they are actually a meal- no little treats here lol). The magic bullet stuff was dirty and I didn’t want to dirty the processor so it was chunks of frozen banana + better n’ butter + VOO for me! I also ate some of it before I realized I forgot to photograph..sorry for the ugly pic. It was still good but nothing beats banana soft serve.

I was so happy with my meals today. I was satisfied and never overly stuffed and my stomach didn’t hurt once! So if you were ever curious as to what I eat (on the perfect day)… there you have it! Until tomorrow 🙂

btw my big has the 4th of july pics but she left her camera at a friends…sorry but it’s going to be alil while longer

Grain Free Day

26 Jun

Today’s post is all about food.

After being so carb crazy lately, I made it a point to stay away from grains today. Trust me, it was needed. I went out last night and woke up to an empty bag of mary’s crackers by the bed…gotta love late night drunk snacking :/

When I woke up my tummy hurt alittle and I didn’t have much of an appetite. I’ve also been craving salty/savory food like crazy lately so this morning I finished the sweet potato from yesterday by cutting the two chunks that were left into thinner slices and topping them with spicy brown mustard.

This is definitely not a green monster but still yummy.

Since the USA v. Ghana game was on I decided kale chips would be the perfect munching food.

I dressed my kale with some nutritional yeast, apple cider vinegar, liquid aminos, salt, and pepper. Wasn’t the best chips I’ve ever made but still delish. I think the vinegar is what made them taste a little funky.

Even though US didn’t win 😦 my food was still a winner :). I ate my plate with a corona light and lime (I know, I’m bad but it’s summer).

After I got home from club pub (aka publix) I was super excited to try out a new salsa I bought. It’s organic with no added sugar and tastes delish so I decided to make a kelp noodle dish out of it in an attempt to be grain free today.

I did a mix of kelp noodles, spinach, red onion, avocado, sprouts and salsa. Totally satisfying!

btw in case you guys haven’t noticed, I’ve been making a serious effort to eat out the fridge before I go to the grocery store again. I have literally been to publix like everyday that I’ve been here so far…not good! So sorry if my eats get a little redundant.

Lastly dessert was chocolate banana soft serve layered with crushed peanut butter cookie larabar and cacao nibs

Hopefully tomorrow I’ll actually workout!
