Errands Galore

Oh mylanta!

Talk about a busy day! I’m back home in Orlando finally and stressed out of my mind! I have been running around doing errands all day because I only have 1 1/2 ish days left home. It’s going so fast! It really sounded like a lot longer when I planned it out but I have to make due with what I have because this was the only time I could go home 😦

The day started with a workout- 30 min. cardio + some back exercises. Then ran back home to get in some food.

We had planned to stop by the eye doctor but they were booked 😦 so we made an appointment for wednesday instead and jetted to COSTCO!! only one of my fav places ever. I’m a loser, i love a good bargain.

After loading up on toilet paper, paper towels, oats and coffee for the rest of my life lol we went to whole foods to get some food since there was absolutely NOTHING to eat at the house. It was actually kind of strange. I had a hard time understanding what my parents eat when their hungry and then I remembered…”oh there’s actually kind of a lot when you consider that they eat like normal people” lol. My brain obviously no longer works that way.

After that, it was bed bath and beyond, then kohl’s, then publix, then BACK to bed bath and beyond, then target (it was obvious that we were starting to get a little loopy from all shopping and could no longer make up our minds).

Somewhere in that we managed to eat and I even made my step dad’s fav vegan coffee cake again!

He’s been missing it alot since I’m the only person that can make it according to him lol.

And to end the day I enjoyed one of my new favs oat bran VOO!!!

It’s more pudding-y because the oat bran is so small and mealy. It’s prob my second fav after rolled oats. What can I say, I like to chew my food!!

Oh and in case you were wondering this is where I slept the night before I drove home and the conditions I’ll be sleeping in again for 2 more days after I return to tally thursday

yes that’s my new room and yes, that is a sheetless mattress 😦 it made me feel so homeless. not fun. Can’t wait to move in my stuff and actually have a HOME again!

VOO Variations

I’ve been experimenting with my beloved VOO by using different grains!

I had a huge bag of rolled oats that I brought to college from costco and I finally used it up so while I was at the grocery store I decided I wanted to try some less processed oats and grains and see how they matched up to my precious *gollum voice*.

First up: Buckwheat Groats

I cooked these then added the usual almond milk, dark cocoa powder, chia seeds, cacao nibs, and raisins then let them sit in the fridge and marinate.

The groats are very soft but they retain their shape so you get to taste the texture of each of the little kernels. It kind of has an odd taste though that I don’t really know how to describe…you’ll just have to try it for yourself. But for me, it was a little off putting.

on a positive note, I must say the groats layer very well. I mean look at those perfect layers!

Second Version: Steel Cut Oats

I don’t know if I just didn’t cook it long enough but the texture was a lot chewier than I thought it would be. Whenever I see steel cut oats on other blogs I guess they just look creamier so I was expecting a porridge type thing which is not what I made lol

Third Try: Breakfast Sundae

I really did try but I had the worst day ever!!! I broke my roommates magic bullet while I was trying to make your breakfast sundae…coincidence? It was so gross, I guess I’m a little too rough with the thing so it started melting plastic into my precious nanners! 😦 not happy. So anyways…this was what I could come up with. Not very pretty but still yummy and isn’t that all that matters? I even used your voluminous oats trick on my steel cut oats 😉 Much better texture and a lot less chewy. Just do me a favor and pretend that the bananas are whipped for the whipped cream and the peanut butter date blob is the sauce and the cacao nibs are the sprinkles. Gotta love the imagination!

*Note: Cooking the oats gives it more of a creamy/ pasty texture I’ve found. This isn’t necessarily bad but I think I just prefer the chew of the uncooked rolled oats

Verdict= although heavens knows I love experimenting and whipping up new concoctions to find new and awesome treats, for my beloved VOO……it seems uncooked rolled oats are the queen bee. Nothing compares to the original my friends, at least for now.

But believe me, this is not the end of my quest to find new delicious obsessions and if I find something that beats the ultimate VOO, you will be the first ones to know 😉

Omnomisaurus

So proud of myself right now!

but more on that later. Last night’s dinner was at Hokkaido a Sushi/Hibachi restaurant

It really was nothing special and I wasn’t really hungry so I ordered a miso soup

and a vegetable roll (cucumber, avocado, seaweed salad). But being the noob that I am, I remembered to photograph after i ate it :/ sawwy

Like I said though, it was no big deal. We did get an onion volcano though

Now to today-

After a day of dentist appointments and errand running I didn’t have time to workout in the morning. I was sad 😦

But then I somehow managed to pull energy out of my magically box of tricks and did Zuzana’s Hottie Body workout at 8:30pm instead of eating a snack- best decision ever because after I treated myself to the best thing ever.


Does this VOO look a little different? I’ll give you a hint…count the layers

hmm there appears to be 3 layers! that’s because it’s actually

chocolate mousse+ banana soft serve+ VOO

Best treat ever 🙂 I om nom nom-ed my little heart out. My official power animal according to Carson is the Omnomisaurus lol

*btw I make my VOO a little different than Angela:

1/3 c rolled oats

1/2 T cacao powder

1/2 T chia seeds

1/3 c almond mylk (or until it is moist enough)

1 tsp vanilla

possible add ins- cacao nibs, walnuts, raisins

I altered the recipe to lower the calories and sugar since I never eat it plain and the banana soft serve adds enough sweetness

I dare you to try it and not love it 😉

non-chicken dinner!

Yesterday turned out to be successful in the fashion department. I bought 2 dresses and a shirt and even though I dropped some stacks they are all gorg!!

I also won a giveaway which is crazy because I never win anything!! I won Saxy Stuff Shopping bags from Cathy at Let’s Be Green Together. She really loves these bags and they look super cute so I can’t wait to try mine out 🙂

I have also been working on my socca skills

I cut my recipe down by 1/4 to make a single serving  portion. Although it still isn’t at the beauty queen stage, I managed to mostly keep this one together and not pour an entire bottle of garlic peppa on it YAY ME!

I ate this bad boy with the last of my curry egg salad and some greens, yum.

Another one of my obsessions that I’ve been enjoying lately………Angela’s Banana Soft Serve Vegan Overnight Oats!!!!

here is the VOO made the night beforeonce again…not really a looker but don’t underestimate the greatness that your tummy will expirience when you layer this puppy with banana soft serve….

Banana + Oats= Pure Bliss (In case you didn’t know i LOVE bananas-> See blog title ;))

Look at that thick/smooth/chewy goodness. I suggest you make these. NOW. it will change your life.
